Humdinger Himalayan salt from Trader Joe’s but when you add the combination of fresh tomatoes, mozzarella, and basil then it is simply delicious.
All you need are ripe tomatoes, fresh mozzarella, fresh basil, olive oil and balsamic vinegar with maybe some salt and pepper… o.k. definitely salt and pepper!

It’s hard to beat the classic flavors of a Caprese Salad, however, this version adds another dimension by adding a rich and syrupy balsamic glaze instead of straight vinegar to top it off.
You’ll know your balsamic glaze is ready for drizzling when it’s all bubbly and thick like this:
I suggest using the best quality extra virgin olive oil you can find for the best flavors. There are all kinds. I prefer the stronger, more robust oils but you may like a light olive oil.

Do you grow your own tomatoes and have extra ones? If you haven’t eaten them all or given them away to your lucky friends then wash, chop and freeze them! Did you know that previously frozen tomatoes are too mealy to enjoy raw, but they are perfect for soups, chili and stews?
