This easy shrimp scampi recipe comes to your rescue if you need an easy dinner idea at a moment’s notice (Tweet This) and the best part is that it looks like it came from a gourmet restaurant… (and it’s healthy too).
Put away that powdered stuff that comes in a box because this recipe is so easy. You know that stuff’s not healthy for you anyway. My version is not only quick and easy, you can make it from things you have on hand.
Easy Shrimp Scampi Recipe
2 T olive oil
2 T minced garlic
1 t lemon pepper seasoning
1 lb raw shrimp (or more)
Heat olive oil and seasonings in a saute pan over med high heat for about 1 minute. Add shrimp and cook about 2 minutes on each side until done.
Shortcuts and Variations
I always keep frozen shrimp on hand and I suggest that you do too. Buy peeled and deveined shrimp on sale and keep it stocked in your freezer to grab at a moments notice. It thaws really quickly by putting it in some warm water and draining it in a colander. Place the shrimp on a paper towel before sauteing so that your sauce doesn’t get watery.
If you really want to save time, buy the shrimp that is already cooked but realize that it won’t absorb the flavors as much as the raw shrimp does.
Suggestions for Side Dishes
Spinach – once your shrimp is cooked, remove from pan and add fresh baby spinach and little more olive oil. Saute until lightly wilted.
Basmati rice or pasta – Start your rice or pasta before the shrimp because it takes a little longer to cook by simply following the directions on the package.
Other – Sprinkle with some crumbled Feta cheese and add a slice of tomato. In the picture above, I added a crab cake that I found in the seafood department and couldn’t resist.
Wine – Pair your shrimp scampi with a light, dry white wine like Pinot Grigio (my personal favorite).
