I’ve heard it said that Chicken Parmesan is really just fancy chicken nuggets! Well, so what? Either way, it’s one of my all time favorites and one of my daughter’s top requests for dinner.

But is chicken parmesan healthy?
The answer is yes. Chicken Parmesan can be healthy when you choose your ingredients right (or it can be super fattening so watch out)
Easy Chicken Parmesan Recipe
1 lb Chicken Breast (I usually keep some on hand in my freezer)
1 jar Organic Marinara Sauce
1/3 pound thinly sliced mozzarella cheese (get it fresh from the deli if you have time)
1/4 cup bread crumbs
Preheat oven to 350. Spray a baking dish with non-stick spray. Set out two plates, putting the bread crumbs on one plate and egg on the other (mixing it up with a fork). Dip each piece of chicken in first in the egg and then lightly in the bread crumbs. Place in single layer in the baking dish. Spoon the marinara sauce over the chicken in a thin layer. Spread the mozzarella cheese on top. Bake in the oven for 3o minutes. Then turn on the broiler and broil for an extra five minutes to brown the cheese.
Keep this easy recipe really healthy by serving the leftover marinara sauce with sauteed zucchini (instead of pasta) and a side salad. We almost never have any leftovers but just in case you do, this is great the next day too. You can also freeze it so that you have something quick on hand.
